These fun gingerbread cookies are great to decorate with children and are delicious too!

  • 370g plain flour
  • 175g unsalted butter
  • 180g light brown sugar
  • 1tsp bicarbonate of soda
  • 3tsp ground ginger
  • 2tsp ground cinnamon
  • 1tsp ground allspice
  • 1/2tsp ground nutmeg
  • 1 large egg
  • 5tbsp maple syrup




1. Sieve your flour into a mixing bowl with the butter, bicarbonate of soda, ground ginger; cinnamon, allspice, nutmeg and mix together until you get a ‘breadcrumb’ like texture and then add the sugar.

2. In a separate bowl, lightly whisk the egg and maple syrup together and then pour this in with your dry mixture.

3. Mix until you get a dough-like consistency and at this stage you can scoop it out of the bowl and knead for about a minute.

4. Wrap your dough in cling film and place it in the fridge for 10 minutes.

5. Before you move onto the next step, preheat your oven so it's ready to use once you have your biscuits cut out. Set it to 170°C (352°F) Gas 3.

6. Using your chosen cutters cut out your men or women.

7. Place cookies onto a baking tray lined with baking paper and cook for 8 to 15 minutes. (Be sure to check your cookies from 8 minutes onwards, as depending on how strong your oven is, they will differ in time to cook).

8. Once you’ve taken them out of the oven, remove from the baking tray and place them onto a wire rack to cool down.

9. When completely cooled, you can now let your imagination run wild and decorate your little gingerbread men. If you plan to put them in a container, it's best to leave them out for a few hours first. This’ll allow the icing sugar to dry and go hard.
