This is a super simple recipe for you to use with children to make yummy cupcakes which can be decorated in any way imaginable.

Serves : 24

Ingredients

  • 170g (6 oz) butter
  • 170g (6 oz) sugar
  • 3 eggs
  • 170g (6 oz) self-raising flour

For decorating

  • 200g plain chocolate or other icing
  • Sweets to decorate e.g. jelly sweets, mini marshmallows, edible glitter, silver balls

Directions

  1. Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cupcake cases.
  2. Mix together butter and sugar until light and fluffy. An electric mixer works well for this though a wooden spoon or whisk can be used by children.
  3. Add eggs one at a time, beating continuously. Sift in flour and mix gently.
  4. Spoon mixture evenly into cupcake cases. Bake for 20 minutes until golden brown and skewer comes out clean. Cool on a wire rack.
  5. To decorate: Melt chocolate either in a bowl suspended over a pan of simmering water, or in the microwave at 30 second intervals.
  6. Drizzle melted chocolate on top of cupcakes and decorate with sweets and any decorations you have. Leave to set. Show off!
